Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce (adjust to taste)
  • Chopped green onions and sesame seeds for garnish (optional)

Instructions

  1. Prep the Chicken: Cut the chicken breasts into bite-sized pieces and set aside.
  2. Prepare the Breading: In one bowl, mix the flour, garlic powder, onion powder, salt, and pepper. In another bowl, place the beaten eggs. In a third bowl, add the panko breadcrumbs.
  3. Coat the Chicken: Dredge each piece of chicken in the flour mixture, dip it into the beaten eggs, and then coat it with panko breadcrumbs, pressing gently to adhere.
  4. Cook the Chicken: For air fryer option, preheat the air fryer to 400°F (200°C). Arrange the breaded chicken in a single layer in the air fryer basket and spray lightly with cooking spray. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through. For oven option, preheat the oven to 425°F (220°C) and bake on a parchment-lined baking sheet for 20-25 minutes, flipping halfway.
  5. Make the Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix well until smooth.
  6. Serve: Drizzle the sweet and spicy sauce over the crispy chicken and garnish with chopped green onions and sesame seeds, if desired. Enjoy hot!
